I use snatch blocks primarily for recoveries at difficult angles, if the stuck vehicle is not in direct line with you but around a corner. (Giving training for them, not actually doing them. Who gets stuck enough to use a winch in real life? )
As for multiplying the force, it's fact. In technical rescues, aka hauling person/people up with ropes, it all comes down to guestimating the load and adding appropriate number of pulleys to the system
